- 4 Lamb chops, thick-cut
- 2 tablespoons fresh mint, chopped
- 3 cloves garlic, minced
- 1 tablespoon olive oil

- 1 cup heavy cream

- In a bowl, combine the lamb chops with 2 tablespoons of chopped fresh mint, 2 cloves of minced garlic, 1 tablespoon of olive oil, salt, and pepper. Marinate for at least 30 minutes, or up to 2 hours.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Sear the lamb chops for about 3-4 minutes on each side, until golden brown. Remove from skillet and set aside.
- In the same skillet, melt 2 tablespoons of butter over medium heat. Add 1 clove of minced garlic and cook for 1 minute, until fragrant.
- Pour in 1 cup of heavy cream and bring to a simmer. Stir in 2 tablespoons of chopped fresh mint, salt, and pepper to taste. Simmer for 2-3 minutes, until slightly thickened.
- Return the seared lamb chops to the skillet and nestle them into the creamy mint sauce. Reduce heat to low, cover, and simmer for 5-7 minutes, or until cooked to desired doneness.
- Ensure the lamb chops are heated through and have absorbed the flavors of the sauce.

- Don’t overcrowd the pan when searing the lamb chops. Sear in batches to ensure proper browning.
