- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/4 cup fresh mint, chopped
- Juice of 1/2 lemon

Instructions
- Pat the lamb chops dry with paper towels. Season generously with salt, pepper, half of the minced garlic, and half of the chopped fresh mint.
- Heat olive oil in a skillet over medium-high heat. Sear lamb chops for 3-4 minutes on each side for medium-rare, or longer for desired doneness. For grilled lamb chops, preheat grill to medium-high and grill for the same time.
- Reduce heat to medium-low. Add remaining minced garlic, fresh mint, and lemon juice to the skillet. Simmer for another minute, spooning the mint-lemon mixture over the lamb chops.
- Remove lamb chops from the skillet and let rest for 5 minutes before serving. Serve immediately.

- Use a meat thermometer to ensure desired doneness; 130-135Β°F for medium-rare.
- Avoid overcrowding the skillet; cook in batches if necessary.
- Marinate lamb chops for at least 30 minutes (or up to overnight) in olive oil, garlic, mint, and lemon juice for extra flavor.
