  • 4 lamb chops (about 1 inch thick)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/4 cup fresh mint, chopped
  • Juice of 1/2 lemon
  • Salt and pepper to taste

Instructions

  1. Pat the lamb chops dry with paper towels. Season generously with salt, pepper, half of the minced garlic, and half of the chopped fresh mint.
  2. Heat olive oil in a skillet over medium-high heat. Sear lamb chops for 3-4 minutes on each side for medium-rare, or longer for desired doneness. For grilled lamb chops, preheat grill to medium-high and grill for the same time.
  3. Reduce heat to medium-low. Add remaining minced garlic, fresh mint, and lemon juice to the skillet. Simmer for another minute, spooning the mint-lemon mixture over the lamb chops.
  4. Remove lamb chops from the skillet and let rest for 5 minutes before serving. Serve immediately.

Notes

  • Use a meat thermometer to ensure desired doneness; 130-135Β°F for medium-rare.
  • Avoid overcrowding the skillet; cook in batches if necessary.
  • Marinate lamb chops for at least 30 minutes (or up to overnight) in olive oil, garlic, mint, and lemon juice for extra flavor.
  • Preheat grill properly for grilled lamb chops to prevent sticking.
