- 4 large egg yolks
- 2 tablespoons unsalted butter
- 1 1/2 teaspoons vanilla extract
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- 1/4 cup toasted coconut flakes for garnish
Instructions
- Prepare pie crust by pre-baking according to package directions and let cool completely
- Make coconut custard by combining milk, sugar, cornstarch and salt in saucepan, cooking until thickened
- Temper egg yolks with hot milk mixture, then return to saucepan and cook 2 more minutes
