- 2 fresh salmon fillets (6 oz each)
- 1 tbsp olive oil
- 1 tbsp butter
- Salt and pepper to taste
- 2 cups fresh spinach
- 2 cloves garlic, minced
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1/4 tsp nutmeg
- 1 tbsp lemon juice
Instructions
- Pat salmon dry and season with salt and pepper. Let rest at room temperature for 10 minutes.
- Heat oil and butter in skillet over medium-high heat. Cook salmon skin-side down for 4-5 minutes until crispy, then flip and cook 2-3 minutes more.
- Remove salmon and sauté garlic for 30 seconds. Add spinach and cook until wilted.
- Stir in cream, Parmesan, nutmeg and lemon juice. Simmer 2-3 minutes until slightly thickened.
- Plate salmon and spoon sauce over top. Garnish with extra Parmesan if desired.
