  • 2 fresh salmon fillets (6 oz each)
  • 1 tbsp olive oil
  • 1 tbsp butter
  • Salt and pepper to taste
  • 2 cups fresh spinach
  • 2 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/4 tsp nutmeg
  • 1 tbsp lemon juice

Instructions

  1. Pat salmon dry and season with salt and pepper. Let rest at room temperature for 10 minutes.
  2. Heat oil and butter in skillet over medium-high heat. Cook salmon skin-side down for 4-5 minutes until crispy, then flip and cook 2-3 minutes more.
  3. Remove salmon and sauté garlic for 30 seconds. Add spinach and cook until wilted.
  4. Stir in cream, Parmesan, nutmeg and lemon juice. Simmer 2-3 minutes until slightly thickened.
  5. Plate salmon and spoon sauce over top. Garnish with extra Parmesan if desired.
