  • 1 1/2 cups granulated sugar
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/2 cup lemon juice, freshly squeezed
  • 2 tablespoons lemon zest
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350Β°F (175Β°C).
  2. In a large mixing bowl, combine flour, powdered sugar, and salt. Cut in cold butter until the mixture resembles coarse crumbs.
  3. Press the crumb mixture evenly into the bottom of a 9×13 inch baking pan. Bake for 18-20 minutes, or until lightly golden.
  4. In a separate bowl, whisk together granulated sugar, flour, baking powder, and salt. Add eggs, lemon juice, and lemon zest. Whisk until smooth.
  5. Pour the lemon filling evenly over the hot, pre-baked crust.
