- For the Shortbread Crust:
- 1 Β½ cups all-purpose flour
- Β½ cup powdered sugar
- Β½ cup (1 stick) unsalted butter, cold and cut into cubes
- ΒΌ teaspoon salt
- For the Lemon Filling:
- 1 Β½ cups granulated sugar
- ΒΌ cup all-purpose flour
- 4 large eggs
- Β½ cup fresh lemon juice
- 2 tablespoons lemon zest
- Powdered sugar for dusting (optional)
Instructions
- Preheat oven to 350Β°F (175Β°C). In a medium bowl, whisk together the flour, powdered sugar, and salt.
- Add the cold, cubed butter to the dry ingredients. Use a pastry blender or your fingers to cut the butter into the flour mixture until it resembles coarse crumbs.
- Press the mixture firmly into the bottom of an ungreased 9×13 inch baking pan. Bake for 20-25 minutes, or until lightly golden brown.
- While the crust is baking, prepare the lemon filling. In a large bowl, whisk together the granulated sugar and flour.
- Add the eggs, lemon juice, and lemon zest. Whisk until the mixture is smooth and well combined.
- Pour the lemon filling over the hot baked crust. Return the pan to the oven and bake for an additional 20-25 minutes, or until the filling is set and no longer jiggles.
- Let the lemon bars cool completely in the pan before cutting into squares. Dust with powdered sugar before serving.
