Description

  • 1 Β½ cups all-purpose flour
  • Β½ cup powdered sugar
  • Β½ cup (1 stick) unsalted butter, cold and cut into cubes
  • ΒΌ teaspoon salt
  • For the Lemon Filling:
  • 1 Β½ cups granulated sugar
  • ΒΌ cup all-purpose flour
  • 4 large eggs
  • Β½ cup fresh lemon juice
  • 2 tablespoons lemon zest
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat oven to 350Β°F (175Β°C). In a medium bowl, whisk together the flour, powdered sugar, and salt.
  2. Add the cold, cubed butter to the dry ingredients. Use a pastry blender or your fingers to cut the butter into the flour mixture until it resembles coarse crumbs.
  3. Press the mixture firmly into the bottom of an ungreased 9×13 inch baking pan. Bake for 20-25 minutes, or until lightly golden brown.
  4. While the crust is baking, prepare the lemon filling. In a large bowl, whisk together the granulated sugar and flour.
  5. Add the eggs, lemon juice, and lemon zest. Whisk until the mixture is smooth and well combined.
  6. Pour the lemon filling over the hot baked crust. Return the pan to the oven and bake for an additional 20-25 minutes, or until the filling is set and no longer jiggles.
  7. Let the lemon bars cool completely in the pan before cutting into squares. Dust with powdered sugar before serving.
